How to Zest a Lemon With the Fine Blade

The Fine Blade is a rasp-style zester. Its narrow teeth take the coloured, oil-rich layer of citrus peel and leave the bitter white pith on the fruit.

  1. Wash and dry the fruit. Wet peel slides on the teeth and clogs them.
  2. Hold the zester at a low angle over the bowl, teeth facing up, and draw the lemon across it in one direction with light pressure. Let the blade do the cutting.
  3. Turn the lemon after every pass. Take the yellow layer only; the moment white shows through, rotate to a fresh strip.
  4. Tap the back of the blade to release the zest that clings to the underside, then rinse before the oils dry on.

Zester vs grater: which is this?

A zester has fine, sharp teeth that shave the outer layer of citrus, hard cheese, garlic, ginger and nutmeg into snow. A grater has larger stamped holes that cut shreds of cheese and vegetables.
